Christmas Market Glühwein

In a large saucepan, pour one litre of dry red wine, and add seven cloves, two cinnamon sticks and one star anise. Take four oranges. Squeeze two of them, and slice the other two. Add the juice and the orange slices to the saucepan and heat the wine over a low heat - be careful it doesn’t boil! When hot, add 50g of light brown demerara sugar and a splash of rum (optional) and reheat. Take the oranges and spices out and serve immediately.

Winter Hot Chocolate

In a food processor grind 120g of dark chocolate (50-70% cocoa) into fine granules. Place the granules in a saucepan and add ½ teaspoon of cinnamon, ⅛ teaspoon of cayenne pepper, ¼ teaspoon of ginger, a pinch of chili powder and one tablespoon of sugar. Pour 500ml of boiling water over the mixture and stir until the chocolate is dissolved. Place on low heat and add 500ml of hot milk as well as a few drops of vanilla extract, stirring regularly. Serve hot chocolate with whipped cream, and a splash of rum (optional).

Spiced Apple Drink

Pour one litre of apple juice into a saucepan. Add ¼ teaspoon of allspice, a pinch of nutmeg and a tablespoon of golden caster sugar. Heat the apple juice over low heat until the sugar is dissolved. Measure out one teaspoon of cloves. Take one small orange and press the cloves into the orange flower side up. Place the orange into the pan and simmer for 15 minutes. At this point you could add a splash of bourbon, or perhaps rum. Serve immediately with a cinnamon stick to garnish.
